Hawthorn is a shrub or small tree with spiny branches and red fruit and is very common in Greece. It is also known as trikoukia, murzia, bourboutzelia, xanthi and xagkathia. The parts used are the flower and mainly its fruit with a sweetish taste. Cherries are rich in antioxidants, flavonoids, saponins, tannins and procyanidins.
